Easy Cheesy Beef Burrito Skillet Dinner with Velveeta Recipe

I just love using delicious Velveeta cheese (aka liquid gold) in my recipes. I typically think of the classic Velveeta cheese dips when I think of Velveeta cheese. My husband loves to make nachos, so we have it quite often as a snack. It also makes a perfect side dish. Who can resist cheesy broccoli soup or macaroni and cheese?! But don't forget that you can use Velveeta in main dishes too. Here is my recipe for an Easy-Cheesy Beef Burrito Skillet Dinner. It was so simple to make. This recipe is perfect for busy families. Since it is a skillet dinner, clean up is a breeze!

Easy Cheesy Beef Burrito Skillet Dinner
1 lb. lean ground beef
1 pkg. (1-1/4 oz.) taco seasoning mix
1 can (10 oz.) black beans, rinsed
1 cup salsa
1 cup water
4 flour tortillas (6 inch)
8 oz. original Velveeta cheese
1/3 cup sour cream
1 large green onion, chopped
1/4 cup fresh cilantro, chopped
1/2 cup crushed tortilla chips

Slice Velveeta cheese into thin slices. Crush up 1/2 cup of tortilla chips.

Take flour tortillas and cut into 1 inch strips. Then cut the strips into 1 inch squares.

Chop green onion and cilantro. Then brown and drain the ground beef.

Add taco seasoning, black beans, salsa and water; stir. Bring to boil; simmer on medium-low heat for 5 min.

Top with flour tortillas and gently fold until tortillas are lightly coated. 

Top with cheese. Remove from heat; cover. Let stand 5 min. or until cheese is melted.

Plate into individual portions. Top with green onion, cilantro, and crushed tortilla chips.

How easy was that? We found this meal to be very tasty and quite filling. This portion should be enough to serve 4-6. This quick meal can be prepared from fridge to table in about 30 minutes. The Velveeta worked well in this recipe. Velveeta melts into a liquid form (liquid gold), so it added a delicious cheesy topping to this dish.
