Chocolate a coconut is a killer combo in my book. So after using Skinnygirl Snack Swap, I found that Chocolate Dipped Rice Squares Topped with Coconut would be a great swap option for me. I printed out the recipe and gave it a whirl!

Chocolate Dipped Rice Squares Topped with Coconut
Ingredients
- 4 cups brown rice crisp cereal
- ½ cup brown rice syrup
- 3 Tbsp vegan butter, like Earth Balance
- 1 tsp vanilla extract
- 1/2 cup semisweet chocolate chips
- 1 tsp coconut oil
- 1/2 cup unsweetened shredded coconut for sprinkling
- In a medium-sized saucepan, melt the vegan butter over medium heat. Add in the brown rice syrup and stir until combined.
- Heat vegan butter and brown rice syrup just until it comes to a rolling boil.
- Immediately remove from heat and stir in 1 teaspoon vanilla.
- Add in the brown rice crisp cereal, and stir together until all the cereal is well-coated.
- Press the mixture into a greased 8×8 pan, ideally using a sheet of wax paper or plastic wrap as mixture will be sticky.
- Place in freezer for at least 10 minutes to firm up.
- Meanwhile, prepare your topping. Melt the chocolate chips and coconut oil in the microwave for 30-60 seconds. Be careful not to burn.
- Remove the pan from the freezer when firm to touch and drizzle on melted chocolate. Sprinkle with coconut if desired.
- Place in the freezer for 45-60 minutes until firm.
- Cut into squares and store in the freezer or fridge.
