Grilled Chicken Pineapple Sliders

I have been loving my Acer Iconia Tab 8 A1-840 FHD. It is the perfect size to take anywhere. Today is Labor Day, and I wanted to say goodbye to summer in style. Like many of us, we wanted to find a great grilling recipe to enjoy on our holiday weekend. I used my Intel Tablet to search for ideas. We decided we wanted to try Grilled Chicken Pineapple Sliders and the options were endless!


I narrowed it down and decided to use a blogger recipe that I found at Serving Up Sunshine. I headed to the grocery store, and I took my tablet with me. The task list apps made it easy to check off the ingredients as I found them. I was all set to prepare my Grilled Chicken Pineapple Sliders!


My super portable Intel Tablet was so easy to take right into the kitchen, so I could follow along with the recipe. 

Grilled Chicken Pineapple Sliders

Ingredients
  • boneless skinless chicken cutlets
  • pineapple slices
  • 1/2 cup soy sauce
  • 1/2 cup coconut milk
  • 1/2 teaspoon cumin
  • 2 tablespoons brown sugar
  • 1/2 teaspoon garlic powder
  • green onion, chopped
  • provolone cheese
  • Hawaiian rolls

Directions
Cut the chicken cutlets into thirds. That seems to be the perfect size to fit onto a slider. In a bowl combine soy sauce, coconut milk, brown sugar, cumin, garlic powder and chopped green onion. Whisk together until blended. Take some of the marinade and set aside for glazing. Place chicken and part of the marinade into a large plastic bag. Zip it locked and place in refrigerator for 1 hour or more.

Warm up your grill to medium heat. Place the chicken on the lower rack, and the pineapple on the upper. Brush the pineapple lightly with the reserved marinade first on both sides, then I use remainder on the chicken.

Top everything on a set of Hawaiian rolls. I stacked the chicken, pineapple, then some provolone cheese. They had delicious flavor, and were the perfect way to enjoy one of our last summer cookouts.
