Shrimp Bake Recipe Served With Snoqualmie Riesling

You must try this recipe! I could not believe how simple it was to prepare. It should be called Simple Sensational Shrimp Bake! That is a lot of S's. Then we have the lovely Snoqualmie Riesling. Yet another S ... but more on that later. Let's start with the recipe for the magical shrimp bake.

Shrimp Bake

Ingredients
  • 1 lb. raw shrimp, deveined and peeled
  • 4 cloves garlic, minced
  • 3 Tbsp. white wine
  • salt and pepper
  • 1/4 cup melted butter
  • 1/2 cup Panko bread crumbs
  • 2 Tbsp. fresh Italian-leaf parsley, chopped
  • half of a lemon

Preheat oven to 425 degrees. In a bowl, use a fork to mix melted butter, Panko, and parsley until well combined. In another bowl, combine the shrimp, garlic, and white wine. We used Wild Mexican Shrimp from Anderson Seafoods. The shrimp was gigantic and so perfect for this recipe. Stir to combine, then pour into a baking dish. Spread out evenly, and then season with salt and pepper. With your fingers, sprinkle the mixture from the first bowl evenly in the baking dish over the shrimp. Transfer dish to oven and bake until the shrimp are pink and opaque, about 15-18 minutes. Squeeze lemon over shrimp bake and serve. Recipe adapted from Gimme Some Oven

So easy right? This recipe was one of my favorites and we will definitely make it again soon. I added lots of lemon over the baked dish before serving. So good. Next time I might actually use more garlic. But we absolutely loved it. The wine pairing for this recipe was Snoqualmie Riesling.

“This organically grown Riesling bursts with fresh aromas of apple and pear characters accented with a touch of lime and mineral notes. A crisp, off dry finish captures the pure elegance of this varietal.”
                                                 ~ Joy Andersen, Winemaker

We loved this light-bodied Riesling. I prefer something sweet and this offered a medium sweet finish. The touch of lime accent made it a lovely companion to the shrimp bake.
